When you go sugar free there are some classics that you have to learn to make without packet convenience – and custard is one of those classics.

It is actually surprisingly easy to make and tastes so much better when made from scratch, with fresh ingredients instead of a powder.

This gave us the idea of developing a Christmas pudding that was completely sugar, grain and lactose free. So on Christmas you too can enjoy pudding with everyone else.

Sugarfree Christmas Pudding recipeWe’ve been thinking for a long time about how to make a Christmas pudding without all of the dried fruit. We can’t think of a Christmas without a delicious pudding and some custard or ice cream on the side.

We’ve decided to do two versions of Christmas pudding.

This one is for those people who are happy to make it on the day. It literally only takes a few minutes. So whilst the family is making a start on the dishes you could whip this recipe up.

This pudding was inspired by our favourite Sugar Free Recipes iPhone and iPad Cookbook App, “Sweet Poison Recipes”, by David Gillespie.

White Christmas

Here’s our lighter, sugar free version, using nuts, lemon, and orange peel (instead of dried fruit) for a burst of flavour.

  • Makes: 24 slices
  • Refrigeration time: 3-4 hours (or overnight)
  • Pan: 20cm x 30cm square slice tin

2 cups puffed rice (available in the health food aisle in most supermarkets)
