Banana pikelets (mini pancakes!)


banana pikeletsA quick snack to whip up with kids who love making pancakes!

These tasty little guys can be delicious and filling for hungry little tummies.

Also good for using up a banana that is looking a little too ripe.

Traditionally pancakes can lack fibre, although you can add back fibre by using wholemeal flour and adding oats.

  • Makes: about 24
  • Cook time: 10 to 20 minutes
  • Pan size: large fry pan on medium heat

1 cup wholemeal self-raising flour (if you only have plain flour add 2 teaspoons of baking powder to make self-raising)
1 mashed banana
1 tablespoon The Sugar Breakup Dextrose
½ cup quick cook oats
