Brandy Snaps using Golden Rice Malt Syrup

The idea of brandy snaps filled with fruit and some plain yoghurt or cream makes us go weak at the knees. This recipe is inspired by our good friend Melinda from Melinda’s Gluten Free Goodies using her gluten free self raising flour.

You will be stunned at how easy it is to make brandy snaps and this recipe will definitely impress family and friends.

What do we like about it the most? It’s made within 15 mins, it looks fancy and the layers can be filled with anything you like. Think ice cream, fresh fruit, poached fruit, cream and plain yoghurt.

These brandy snaps are fructose free, egg free and gluten free.


  • Makes: 6-8 biscuits
  • Time: 15 mins
  • Tray: biscuit tray lined with baking paper
  • Oven temp: 165°C (160°C fan forced)
  • Baking Time: 6-7 mins

10g butter
2 tablespoons The Sugar Breakup Organic Golden Rice Malt Syrup
1/4 teaspoon of ginger powder
1 tablespoon of Melinda’s gluten free self raising flour

Putting it together

  1. Turn the oven on to 165C (160C fan forced) and line your biscuit tray with baking paper.
  2. In a small pot place the golden rice malt syrup, butter and ginger powder on low heat and stir until the butter is completely melted, take it off the heat just before it starts to boil.
  3. Using a metal spoon, mix in the gluten free self raising flour until it’s blended together.
  4. Carefully spoon level teaspoons of mixture onto the baking tray, make sure you leave plenty of space for the brandy snaps to expand.
  5. Place into the oven for 6-7 minutes or until the brandy snaps bubble and turn golden brown. Be careful that you don’t let it go too far and burn. We keep an eye on it in the oven for the last 2 minutes to make sure.
  6. Take out of the oven and let them sit for two minutes and they will set. Then move each brandy snap onto a wire rack to cool. Be careful the brandy snaps are delicate.
  7. Decide on a filling and use 1-3 brandy snaps to create a gorgeous and yummy dessert.
  8. Enjoy!

Tips and hints

    • We suggest fillings like ice cream, fresh cream, yoghurt or custard.
    • You can use fresh fruit like strawberries, mixed berries, raspberries etc. Alternatively you can use stewed fruit like rhubarb.
    • Just eat the biscuits plain. They are delicious on their own.
