My kids have been asking for this chocolate mousse every night since I first made it. What they don’t know is that it is incredibly easy to make (something I can whip up whilst they are finishing their dinner) and it only has a tiny bit of sweetener added!
Prep time: 5 minutes
300ml Thickened Cream
¼ cup cocoa or raw cacao powder
¼ cup* The Sugar Breakup Organic Golden Rice Malt Syrup
- Place all the ingredients in a bowl and using an electric mixer whisk until thick and creamy.
- Serve immediately on its own or with berries.
The amount of Golden Rice Malt Syrup you use is really dependent on how long you (or your guests) have been sugar free. ¼ cup is a good amount for guests who are not sugar free but you can use as little as 2 teaspoons of Golden Rice Malt Syrup if you are used to being sugar free.
We whisk and serve this immediately but if you want it to ‘set’ like old school chocolate mousse simply dissolve 1 teaspoon of gelatine in 1 tablespoon boiling water. Allow to cool slightly and add during mixing. Pop in the fridge for a couple of hours or overnight to set.
